Vegan Breakfasts That Are Actually Delicious And Good For You
Vegan Blueberry Pancakes
Ingredients:
- 1 flax egg
- 150g all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon kosher salt
- 1 cup almond milk
- 1 teaspoon apple cider vinegar
- 1 tablespoon maple syrup, plus additional for serving
- 2 tablespoons neutral oil (vegetable or grapeseed)
- 1 pinch turmeric (optional)
- 150g fresh or frozen blueberries
Method:
- Start the flax egg (it needs to sit for 15 minutes).
- In a medium bowl, whisk together the all-purpose flour, baking powder, cinnamon, and kosher salt.
- In a separate bowl, pour in the almond milk, maple syrup, and oil.
- Add the egg.
- Stir the wet ingredients into the dry ingredients.
- If you’d like, add a tiny pinch of Indian turmeric to mimic the colour an egg yolk adds.
- Lightly press a skillet with additional grapeseed or vegetable oil. Heat the skillet to medium heat.
- Pour the batter into small circles, and place blueberries on top. Cook the pancakes until the bubbles pop on the top and the bottoms are golden. Then flip them and cook until done.
- Serve immediately with maple syrup.
Cardamom & Peach Quinoa Porridge
Ingredients:
- 75g quinoa
- 25g porridge oats
- 4 cardamom pods
- 250ml unsweetened almond milk
- 2 ripe peaches, cut into slices
- 1 tsp maple syrup
Method:
- Put the quinoa, oats, and cardamom pods in a small saucepan with 250ml water and 100ml of the almond milk.
- Bring to the boil, then simmer gently for 15 mins, stirring occasionally.
- Pour in the remaining almond milk and cook for 5 mins more until creamy.
- Remove the cardamom pods, spoon into bowls or jars, and top with the peaches and maple syrup.
Green Apple And Spinach Smoothie
Ingredients:
- 1 large green apple
- 1 tablespoon maple syrup
- 500ml water
- 20g raw cashews
- 3 cups spinach
- 10 ice cubes
- 1 tablespoon fresh squeezed lemon juice
Method:
- Core the apple and cut it into chunks, leaving the skin on.
- Place all ingredients a blender and blend.
- Add the lemon juice and blend for a few seconds again.
- Taste, and add more maple syrup and/or lemon juice as desired.
- Serve immediately, or refrigerate for up to 1 day.
